Peach Cobbler or Blackberry Cobbler - the perfect fall dessert
I cannot believe I haven't put this recipe on my blog yet. What is wrong with me? This is my "go to" recipe when I need a dessert quick. I double for parties or church meetings. I haven't met a person that doesn't love peach cobbler. They may be out there, but they don't hang around me. I must only attract the "pro-cobbler" kind of people!
Peach Cobbler
TOPPER
1 c. flour
1 Tbl. sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
1/4 c. butter
1/4 c. milk
1 egg
FILLING
1 bag frozen peaches
1/4 tsp. cinnamon
1/2 c. sugar
1 Tbl. cornstarch mixed with ¼ cup of cold water. Mix well.
1 tsp. lemon juice
pinch allspice
Boil the filling ingredients together until thick in a pan on top of the stove.
Mix the dry ingredients of the topper together. Cut in the butter. Stir in the milk and egg.
Pour filling ingredients into a 9 x 9 x 2 pan (if you double the recipe, use a larger pan). Put spoonfuls of the topper all over the top. Sprinkle with sugar (I use raw sugar).
Bake for 20 min. Top hot cobbler with ice cream. Enjoy!
Same recipe as above except you can substitute blackberries instead of peaches and leave out the cinnamon and allspice.
