Inside Out Cabbage Rolls - economical and delish!
I do love Cabbage Rolls on a cold day. I had three beautiful heads of lettuce in my winter garden and I wanted to use them. I wanted to find a quicker way to make them. I found a great recipe on Allrecipes that I tweaked (of course) quite a bit. Enough to call it my own. This is economical, colorful, easy and healthy. What more could you ask! We've gotten two+ meals out of it for a family of four. Everyone in our family loved it and went back for seconds. Leftovers are even better.
Inside Out Cabbage Rolls
1 lb. lean ground beef
1/2 lb. Owens Hot Breakfast Sausage
1 cup finely chopped onion
1 clove minced garlic
1 - 14.5 oz Muir Glen Fire Roasted Diced Tomatoes
1 - 6 oz can tomato paste + 2 cans of water
1 head of cabbage chopped
olive oil
1 cup uncooked Basmati rice (you can use regular long grain rice also)
1 tsp. salt
1 tsp. black pepper
1 dash of cayenne pepper (optional)
1 tsp. onion powder
1 tsp. garlic powder
28 oz of chicken broth (you can also use beef broth)
Preheat oven to 350
Brown the meat. Saute the onions and garlic until the onions are clear. Add spices.
Mix in the Rice & tomato sauces with the meat mixture.
Pour it into a 9 x 13 inch baking dish. Put the cabbage on top.
Pour the broth over everything.
Cover with foil and seal it well.
Bake for 1 hour.
Stir, replace the foil and bake for another 30 minutes.
